Healthy Spin on Breakfast Favorite

Do you wake up in the morning and crave indulgent pancakes but can’t afford all the calories and don’t want to consume processed ingredients? With this simple and easy recipe you can enjoy your pancakes with no guilt! These banana pancakes are delicious, light, and full of protein.

 

This healthy banana pancake recipe calls for minimal ingredients that you probably already have in your fridge or are relatively inexpensive to purchase at your local grocery store. I have made these several times, varying them slightly each time. I have tried adding crushes walnuts, fresh berries, dark chocolate chips, and protein powder, or a combination of the four and they all turned out absolutely delicious. If you choose to enhance your pancakes with these ingredients, add the protein powder before putting the ingredients in the Magic Bullet and sprinkle the nuts, fruit or chocolate chips after pouring the mix on the griddle.

 

Ingredients: the only ingredients you absolutely need are eggs and banana; the oats add texture and thickness, the apple sauce adds moisture and the vanilla and cinnamon make the batter more flavorful.

  • 2 Eggs

  • 1 Banana

  • 1/2c Oats (aka oatmeal)

  • 1/4c Apple Sauce

  • 1 tsp Vanilla

  • 1/2 tsp Cinnamon

 

Directions

  • Blend all ingredients in a magic bullet or blender until smooth (about 30 seconds)

  • Lightly coat griddle with nonstick spray or butter

  • Cook until lightly brown on both sides

  • Drizzle with pure maple syrup
